Afghan Biscuits (New Zealand Cookies)
Ingredients
- Butter 200 g, softened
- Sugar 100 g, caster (superfine)
- Flour 180 g (all purpose)
- Cocoa powder 2 tbsp
- Cornflakes 40 g
- Walnuts 25 g, finely chopped
For the icing
- Milk chocolate 200 g, chopped
- Cream 50 ml, double (48% fat)
- Butter 25 g
Instructions
- To prepar the Afghan biscuits begin heating the kitchen appliance to 180°C/160°C fan.
- Put the butter and sugar into a bowl and beat along till light-weight and creamy.
- Sieve the flour and cocoa along and stir into the creamed mixture.
- Add the cornflakes and walnuts and blend well.
- Shape the mixture into balls and place on a lubricated baking receptacle.
- Bake for concerning quarter-hour till firm.
- Put the chocolate, cream and howeverter into a bowl over a pan of hot but not boiling water.
- Remove the bowl from the warmth and stir till the mixture starts to thicken.
- Spoon a touch icing on high of every cookie. Leave the Afghan biscuits to line.
