1 pound beef stew meat, chopped into 1 inch pieces
1 pound pork stew meat, chopped into 1 inch pieces
1 pound lamb stew meat, chopped into 1 inch pieces
1 tablespoon olive oil
2 large onions, peeled and sliced
1 teaspoon salt
2 teaspoons peppercorns
8 whole allspice
2 bay leaves
3 cups water
Instructions
Brown beef, pork, and lamb meat on all sides in vegetable oil over medium-high heat. Place 1/2 the sliced onions within the bottom of a slow cooking utensil, cowl with 1/2 the meat, and sprinkle with 1/2 the salt, peppercorns, allspice, and a herb. Repeat the layers.
Pour in two cups water, cowl slow cooking utensil and permit to cook on low heat for six to eight hours. Add up to the remaining one cup water if necessary because it cooks.
