Ingredients:
- 4 peeled fresh prawns
- 4 mangoes cut into slices
- Rocket leaves
- 1 avocado
- Mint leaves
- For the Dressing:
- 1x long red chilli, finely sliced
- 1 cup of coriander leaves
- Juice from 1 lime
Instructions
- Toss rocket leaves, avocado, cucumber, mint leaves and high with contemporary Australian mangoes and boiled, bare-assed prawns
- mix finely cut chili, juice and coriander to decorate and serve
