Verde Chicken Soup Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced sweet onion
  • 1 teaspoon dried cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 16 ounces salsa verde
  • 15-ounces cannellini beans or Great Northern beans
  • 1 pound (about 4 cups) shredded cooked chicken
  • 32 ounces chicken broth or stock

Directions

  • Heat oil during a massive pan over medium heat. Add diced onion and cook, stirring often for 4-5 minutes.
  • Add cumin, cilantro, salt and pepper, still stir and cook for an additional one minute, till scented.
  • Stir in condiment verde and produce to a simmer, stirring often.
  • Add remaining ingredients, bring round a simmer. Salt and pepper to style, lower heat and cook lined for concerning twenty minutes.
  • Garnish with cream, recent cilantro, chives or scallion.
