Chicken Boscaiola

Ingredients

  • 1 pound boneless skinless chicken breasts cut into bite sized pieces

  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil (or 2 teaspoons fresh chopped)
  • 1 tablespoon fresh Italian flat leaf parsley, chopped
  • ½ cup grated parmesan cheese
  • 1 pound fettuccini
  • 1 tablespoon fresh Italian flat leaf parsley, chopped to garnish dish

Instructions


  • in a very giant sauté pan over medium high heat, mix one tablespoon every of oil and butter till dissolved and frothy.
  • operating in 2 batches, add in chicken and brown on all sides, regarding 3-4 minutes per batch. don't over cook. take away chicken to a flat plate to cool down and stop the cookery method.
