Kerikeri New Zealand Corn Salad

Ingredients 

  • 2 cups cooked sweet corn
  • 1 cup cooked green peas
  • 1 cup diced cucumber
  • 2 tablespoons chopped green onions or 2 tablespoons chives
  • 1 garlic clove, minced
  • 14 cup salad oil
  • 2 tablespoons vinegar
  • salt & pepper
  • cayenne pepper

Instructions

  • Drain the parched vegetables well and blend with the cucumber.
  • Shake the oil & vinegar along in an exceedingly screw high jar with salt & pepper, cayenne pepper, minced garlic and inexperienced onions and dress the vegetables with this, moving gently till all ar coated.
  • Serve cold.
