Ingredients
5 Tablespoons butter4 cups yellow onion chopped fine
salt and pepper
1/4 teaspoon cayenne pepper
1/3 cup water
1 1/2 Tablespoons balsamic vinegar
2 1/2 cups sour cream
chopped chives for garnish (optional)
Instructions
- In a large, 12-inch pan over medium heat soften butter. Add onions, 3/4 teaspoon salt, 3/4 teaspoon pepper, and cayenne. Cook, stirring sometimes, till onions ar clear, regarding ten minutes. cut back heat to medium-low and continue preparation till onions ar golden, regarding ten minutes.
- Add half the water to pan and cook, scraping up any tanned bits, till water is gaseous, regarding five minutes. Add remaining water and cook till onions ar caramelized and water is gaseous, regarding five minutes longer. take away from heat and stir in vinegar. Scrape onions to medium bowl and let cool to temperature, regarding twenty minutes.
- Add cream to onions and stir to mix. Season with salt and pepper to style. Refrigerate for a minimum of half-hour. prime with sliced chives and serve!
