Punajuuripihvit -- Finnish Beet Steaks

Ingredients 

  • 1 (16 ounce) can beets, sliced, drained
  • 1 egg, lightly beaten
  • 12 cup breadcrumbs, fine, dry
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Dip beets in crushed egg, then sprinkle half the bread crumbs onto a towel. Place beet slices on the crumbs & sprinkle with remaining crumbs.
  • in a very frying pan, over medium-low heat, soften butter, then saute beet slices, turning to brown both sides, concerning three minutes for every aspect.
  • Place on a serving platter & sprinkle with juice & parsley.
