Keto Chicken Cauliflower Fried Rice

Ingredients
  • 1 Cauliflower medium head
  • 1/2 lb chicken breast cut into bite pieces
  • 2 oz bacon fried and chopped
  • 2 eggs beaten
  • 1 tbsp ginger minced
  • 1 cloves garlic minced
  • 2 scallion chopped
  • 3 tbsp olive oil divided
  • 1 1/2 tbsp coconut aminos
  • salt and pepper to taste
 Instructions
  • Cut the cauliflower into florets and pulse in an exceedingly kitchen appliance till you get rice-sized items. Drain and put aside.
  • in an exceedingly pan, heat oil. Fry bacon till crisp, take away and chop into little items.
  • Whisk eggs and within the same pan to form disorganized eggs. take away and put aside.
  • Heat an added tablespoon of oil and fry chicken items, stirring sometimes, for 7-8 minutes, season with salt and pepper.
  • Heat a tablespoon of oil within the pan, add ginger and garlic, cook for thirty seconds. Add cauliflower rice, cowl with a lid and cook on low for 6-8 minutes. Stir in bacon, chicken, scrumble and coconut aminos. Season with salt and pepper if required.
  • Garnish with sliced scallions and serve forthwith.
