Whitebait fritters

Ingredients

  • 1 cup – flour
  • 1/2 teaspoon – baking powder
  • 1/2 teaspoon – salt
  • 1 – egg
  • 1/2 cup – milk
  • 125 g – whitebait
  • 2 tablespoons – oil
  • lemon wedges

Directions

1. Sift flour, leaven and salt into a bowl.
2. Add egg and half the milk.
3. combine into a swish batter. Keep adding a lot of milk if not swish enough.
4. Drain whitebait and blend in with the batter mixture.
5. Heat oil in a very pan. (If you utilize atiny low pan, you'll build multiple little fritter).
6. Add fritters and cook till golden on each side.
7. Drain the fritters on absorbent paper and serve with lemon!
