Red Fruit Soup (Norway)

Ingredients 

  • 1 lb berries, fresh (strawberries, raspberries, blackcurrants, redcurrants, blackberries, blueberries, cranberries, or a )
  • 2 tablespoons caster sugar (white sugar)
  • 2 cups cold water
  • 2 tablespoons cornflour (cornstarch)

Directions

  • place the fruit, sugar and water during a pan. Cook them over a coffee heat for 5 minutes, till the fruit is soft.
  • Let the fruit cool, then use the rear of a spoon to push it through a sieve into a bowl. Throw away any bits left within the sieve.
  • place the starch during a cup. combine it with a tablespoon of the juices from the roast fruit, till it's sleek.
  • Stir the starch mixture into the fruit. Then, pour the fruit into the pan and convey it to the boil.
  • flip the warmth down low. Cook the fruit for 5 minutes, stirring it with a picket spoon all the time.
  • Take the pan the warmth and let the mixture cool. Pour it into four glasses or bowls. Chill them during a white goods.
  • Garnish with recent berries before serving.
