Vegan Butter Chicken

Ingredients

  • 1 can jackfruit
  • 1 onion
  • 2-3 garlic cloves
  • 1 1/2 tsp ground cumin

  • 1/2 tsp turmeric (optional)
  • 1 tsp coriander
  • 2 tsp ginger, minced
  • 1/4 tsp kala namak (optional)
  • 1 cup vegetable broth
  • 1/2-1 tsp salt
  • 1/2 tsp black pepper

Sauce

  • 3 roma tomatoes
  • 3/4 cup cashews (100 g)
  • 1/2 cup coconut milk (canned)
  • 1/3 cup tomato paste
  • 2 tsp lemon juice, fresh

Directions

  • Pour plight over the cashews and let sit for a number of minutes.
